3 Flounder Fillets
1 Cup Sliced Onion
2 Cups Shredded Carrot
1 Garlic Clove
2 TBSP Chopped Scallion
Cut about a cup of strips of sweet onion. Shred a large carrot with a vegetable peeler to make about 2 cups. Crush a garlic clove and chop finely about 2 TBSPs of scallion. Sprinkle salt on 3 flounder fillets and let it rest for about 10 minutes.
Saute the onion with 2 TBSP of olive oil until soften and sprinkle salt on top. Add the carrots, crushed garlic , 2 TBSP of chopped scallion. Sprinkle to taste some black pepper and pepper flakes and cook on low heat until all is tender.
Place the fish fillet on top, cover and steam the fillet for 5 minutes. Flip the fillet and cook uncovered for 3 more minutes.
Serve with mashed potatoes.
