Couscous Salad

Making couscous is a complicated, long process. We will be using a store-bought couscous. This is not the usual use of couscous. Usually it is served with soup, but this is a wonderful salad.

Ingredients:
1 Cup Couscous
2 Cups Water
½ tsp Garlic Powder
1 Onion
1 Stalk Celery
1 Clove Garlic
¼ Cup Dry Fruit
¼ Cup Pecans
½ Cup Parsley
1 Scallion
5 Olives
¼ Cup Sun Dried Tomatoes
1 tsp Salt
2 TBSP Olive Oil

Preparation:
Chop the onion and celery, crushed the Garlic. Sauté the onion until it softens and turn color. Add the celery and garlic. When Everything soften put it aside.
Crush the nuts, chop the scallion, parsley, sun dried tomatoes and dry fruit.
Boil water with salt and garlic powder. Mix the water and olive oil with the couscous in a pot, cover and let sit until all the water is gone. Mix all the ingredients together and serve cold.
