“Doctorski Bread”

Ingredients:

      1 Cup Whole Wheat Flour
      1 Cup All Purpose Flour
      1/4 Cup Wheat Bran
      1 tsp Dry Yeast
      2 TBSP Sugar
      1 tsp Salt
      2 TBSP Oil
      Water

Preparation:

      Pour to a large bowl 1 cup of whole wheat flour, 1 cup all purpose flour, and 1/4 cup wheat bran. Create a well in the center and pour a 1 tsp of yeast into the well. Add 2 TBSP of sugar and 1/4 cup of lukewarm water and mix in the well in the middle. Let it rest for 5 min. Add 1 tsp salt, 2 TBSP oil to the flour, and 1/2 lukewarm water. Stir with a wooden spoon and knead for 2 minutes. Make a ball of dough in the bowl and cover with plastic wrap. Let it rise in warm place until it doubles in size.
Deflate the dough and reshape the ball. Line a baking tray with parchment paper and cover loosly with oiled plastic wrap. Let the dough rise again and preheat the oven to 350F. Score the dough and bake for 35 - 45 min or until it turns golden brown.
