“Chickpeas & Potatoes”


      Ingredients:


1 small onion, chopped

2 medium potatoes, diced

2 cloves of garlic, crushed

1 cup of chickpeas

1 tsp of ginger, crushed

1/4 tsp of salt

1/4 tsp of cumin

1/4 tsp of turmeric

2 TBSP of Olive Oil

1 cup of water

      Preparation:
Soak the chickpeas over night (or use one can).
In a deep pan sautee the salt, turmeric and cumin for 20 sec and add the olive oil. As soon as it heats up throw in the chopped onion and let sweat. Add the garlic and ginger and stir until the onion caramelizes. Lower the heat and add the diced potatoes and stir for about 5 minutes making sure it doesn't stick to the bottom. Add the chickpeas with a cup of water, bring to boil, cover and let simmer for 1/2 hour or until everything is soft. You can check for softness if everything cuts with a spoon.
