Quinoa Salad

  Savory quinoa salad, this power food is reach with protein and is flavorful. Remember to was the quinoa well and to lightly roast it to dry before cooking it.

Ingredients:
1 Cup Quinoa
2 Cups Water
 ½ Cup Canned Chickpeas (or cooked)
1 Carrot
2 Scallions
1 Garlic Clove
1 tsp Crushed Ginger
½ Cup Chopped Parsley
¼ Cup Cranberries
¼ Cup Pepitas
¼ Cup Lemon Juice
1 TBSP Honey
1 tsp Salt
1 TBSP Olive Oil

Cook the quinoa until all the water is gone. Sauté the scallion, garlic, and ginger. Blanch the carrots and cranberries. Mix the rest and serve.
